Albariño, two ways.

The Albariño, two ways pack is a story of one wine that wanted to be two! When I found out there was some Albariño available from the Two Terraces vineyard, I was so excited for the opportunity to work with such a refreshing and versatile variety.

The whole bunches were hand harvested, de-stemmed and macerated on the skins for two weeks. A very light daily hand plunge and the addition of my active vineyard starter yeast which started ferment underneath the vines, ensuring the natural and wild yeasts are represented in the finished wine. 

After fermentation was complete, the "free run" Albariño was pressed into both large spherical and small Tinajas for ageing on its lees. This wine became the Amphora Albariño.

During pressing, the 'skins' portion began to turn a bright orange colour. I separated this amber portion into puncheon & barrel. Later down the ageing track the pressings component from the Amphora Albariño announced itself as its own wine. So I paid attention and gave it its own voice. This wine became the Amber Albariño.
